Ingredients:
– 150 g whipping cream
– 75 g milk
– 3 egg yolks
– 3 egg whites
– 20 g caster sugar
– 180 g dark chocolate 70% cocoa solids
– 75 g milk chocolate 40% cocoa solids
Preparation:
- Bring the cream and milk to the boil in a saucepan. Remove from the heat and pour over the chopped chocolates, then whisk to combine. Add the egg yolks and mix well.
- Beat the egg whites with the sugar using an electric mixer.
- Mix with the chocolate mixture. The mixture should be perfectly smooth and liquid.
- Immediately place the mousse in a bowl and drizzle with olive oil.
